We are the only research institute in the Czech Republic that has been continuously dedicated to brewing and malting since 1887. Our main focus is research and innovation in the food industry, with particular emphasis on brewing and malting. In addition, we offer commercial services such as raw material and product analysis, the sale of brewing yeast, and the dissemination of knowledge to both professionals and the general public.

Accredited analytical laboratories in Prague and Brno perform a wide range of analyses – from raw materials and intermediates to finished products – according to the highest standards.

COURSES

We offer educational programs for both professionals and enthusiasts in brewing. Accredited retraining courses, sensory analysis, microbiology, tasting, technology, and sanitation.

PUBLISHING

We publish the professional online journal Kvasný Průmysl as well as non-periodical publications such as methodologies and popular science books.

YEAST

We offer brewing yeast for Czech lagers as well as specialty beers in any quantity. Available for pick-up in Prague or delivery by prior arrangement.

Accredited Laboratories

 

We perform analyses from raw materials to final products. Our accredited laboratories in Prague and Brno specialize in the needs of the brewing and malting industry, but we also carry out analyses of materials beyond the food sector – for example, in biotechnology and agriculture.

We analyze cereals, hops, malt, wort, beer, water, metals, sugars, mycotoxins, and foreign substances (heavy metals, ATNC, biogenic amines, PCBs, PAHs), as well as pesticides and nitrosamines.

 

GMP+ /Good Manufacturing Practice

 

GMP+ is an international certification system for ensuring feed safety, combining the principles of Good Manufacturing Practice with requirements for risk management and traceability within the supply chain. We hold GMP+ certification for the determination of aflatoxin B1 in feed materials (compound and supplementary feed).

Aflatoxin B1 is a highly toxic and carcinogenic mycotoxin that can be found particularly in cereals, maize, and nuts. In the GMP+ system, its monitoring and control are a critical part of feed safety requirements.

We meet strict criteria for the quality of analyses, method validation, result traceability, and risk management.

Odolchmel

New drought-tolerant hop varieties: Saaz Shine, Saaz Comfort, Juno, Uranus, Ceres and Saturn. Developed within the project QK21010136 of the Ministry of Agriculture, in collaboration with the Hop Research Institute Saaz Co., Plzeňský Prazdroj, a.s., and the Agricultural Company Chrášťany s.r.o.

Yeast Collection

The quality of beer begins with high-quality raw materials and a stable yeast strain that ensures a balanced sensory profile of the final product. The source of these production strains is the unique Brewery Microorganism Collection of the RIBM, established in 1946. Today, it contains more than 100 strains of both bottom- and top-fermenting yeasts.

The collection is internationally registered and preserves not only yeasts but also lactic acid bacteria. Strains are maintained using both traditional and modern methods, including cryopreservation.

The collection’s strains are used not only by breweries but also by universities and research institutions across Europe, the USA, Australia, and Vietnam.

Czech Beer (PGI)

We contributed to the legislative approval of the Protected Geographical Indication (PGI) “Czech Beer” in the EU, thereby protecting the traditional production and quality of Czech beer. We verify the characteristics of barley and hop varieties and are the only institution authorized to recommend suitable varieties for the production of Czech Beer.

 

Sustainability

Seasonal weather fluctuations, especially prolonged droughts, are causing challenges in the production of malting barley—a crop with a centuries-long tradition in Bohemia and Moravia. We focus on strategies that reduce the impact of drought on the sustainable production of both barley (QK1910197) and hops (QK21010136).

Courses / Beer Sensory Analysis

We develop measurement methods that allow for objective and rapid quantification of sensory defects in beer. As experts in beer sensory analysis, we organize sensory (tasting) seminars and conduct certification exams for brewery assessors.

 

Beer Innovation

We participated in the development of gluten-free beer that meets strict standards for people with celiac disease. We were also involved in the creation of university beer for Charles University: a strong pale lager Pěkný číslo and a non-alcoholic beer Slušné číslo.

In cooperation with the Hop Research Institute in Žatec, Plzeňský Prazdroj, and ZS Chrášťany, we are working on the scientific project QK21010136 “Application of New Hop Varieties and Genotypes Resistant to Drought in Cultivation and Brewing Practice.”

The result is a series of drought-tolerant hop varieties, known as Odolchmely, including: Saaz Shine, Saaz Comfort, Juno, Uran, Ceres, and Saturn.
